The seventh episode of Gordon Ramsay's Secret Service, titled “Callahan's Part One,” aired on July 9, 2025, and focused on Callahan's Seafood Bar & Grill in Frederick, Maryland. Once known for its seafood, the restaurant has been struggling since the founder passed away.
With his daughters now in charge, the place is facing problems related to poor leadership, cleanliness issues, staff behaviour, and lack of teamwork.
In the episode, Gordon Ramsay went undercover by disguising himself as a customer to find out what was going wrong.
During his inspection of the kitchen, he found several hygiene problems, including greasy surfaces, dirty equipment, and signs of pests.
During service, the staff appeared disorganised, and the manager had difficulty staying in control.
After observing everything, Ramsay revealed his identity to the team and shared what he had seen. The staff then opened up about the issues, and tensions grew as they discussed the problems in more detail.
By the end of this episode of Gordon Ramsay's Secret Service, Ramsay chose to walk out, frustrated by the lack of leadership and responsibility, leaving the team to deal with the situation on their own.
Callahan’s Seafood Bar & Grill had been running for over 20 years before the founder passed away. After his death, his daughters took over. Anika, the eldest, became the manager, while Elise and Brittany helped when they could. Since both sisters work full-time at a hospital, they weren’t always available. None of them had any formal business training.
Anika found it hard to manage the daily work at the restaurant. Staff members said there was no clear structure or leadership. A line cook mentioned that roles were not clearly defined, and things felt unorganised. A longtime server also said the place lacked direction. Due to a lack of accountability, tension grew among the staff, and the quality of work began to decline.
Using hidden cameras set up before his arrival, Gordon Ramsay observed the kitchen’s condition and quickly realised it was in very poor shape. Grease had built up on surfaces, equipment was either broken or not maintained, and there were signs of rodent droppings.
Food was not stored properly, and the refrigerator and lower shelves had hygiene problems. The dining area also had worn-out furniture and possible health and safety risks.
During Ramsay’s first undercover visit, the food served did not meet acceptable standards. Service was very slow, and the staff paid little attention to the guests.
A guest invited to assess the experience said the dishes were disappointing and noticed that the dessert may have been stored in an unclean area.

After seeing the problems, Gordon Ramsay called the whole team together for an urgent meeting. He told them he had been watching what was happening and pointed out several issues, such as unsafe food handling, dirty kitchen areas, and unclear staff roles.
