What's it like working as a Netflix "taco scout"?

  • Los Angeles food writer Javier Cabral visited cities in eight states and in Mexico in search of the best tacos for Netflix's new foodie docuseries Las Crónicas del Taco, or Taco Chronicles. "One that comes to my head right away is a place in the carne asada episode that is called Tacos Armando. That guy uses this meat that is really high-quality, prime beef," said Cabral. "If you eat meat, you can tell when you have a beautiful, juicy, marbled piece of beef. It stood out to me because it was like, oh, this is what asada is and should be. It changed my mind on an entire type of taco. It’s extreme taco nerd geek stuff, but all these little details end up making a better taco."
